Making a rare appearance in our case this week is Montboissier, a lovely, French Morbier-style cheese. It replicates the history of the shepherds saving the morning milk curd and the afternoon milk curd, protecting the morning curds with a layer of ash. It sports a natural rind, and the texture of the paste is a bit springy. The aroma is a bit yeasty, and flavor is sweet, rich, a bit nutty and finishes with a tiny bit of bitterness. It pairs well with fruity white wines, nuts and grapes. If you don't want to try the French pronunciation, just call her what we do... Bossy!
