Rogue Echo Mountain Blue is a richly flavored blue made with a unique regional blend of sustainable and rBST/rBGH free raw cow and goat milk. Aged for a minimum of 180 days in Rogue Creamery's historic caves, the final product has a semi-soft dense texture with a silky smooth mouth feel and subtle goat tang. If serving on a cheese plate, simple pair with wine and full-flavored wheat crackers. It is fantastic with savory and ethnic foods, and is also an excellent stuffing for meat, poultry, and vegetables: stuff chicken breasts with Echo Mountain, shallots, and spinach; stuff pork loin with Echo Mountain, sage, and onions. Pair with lighter reds like Pinot Noir or a Viognier with with herbaceous, floral tones. Also try Cabernet Franc or a peppery Cabernet Sauvignon.

Guffanti Erborinato Sancarlone Caffe is a variation of Sancarlone Blue, a blue cheese from the Novara region of Italy that bears the name of the patron saint of the town of Arona. This is the same cheese, but it is now covered in coffee and crushed coffee beans! Serve with chutney or red onion jam and rye bread. Pair with full-bodied reds, sweet dessert wines, and Grappa.

Cambozola Grand Noir is a creamy, melt in your mouth blue from Bavaria, Germany. What makes this blue as exceptional as it is, is the unique waxy black mantle: each wheel is dipped by hand in black wax to protect the cheese as it ripens! This covering allows it develop a silky and creamy texture, unique among blue cheeses. Serve with dried fruits and nuts, figs, pomegranate, and honey. Pair with Auslese Riesling or Dopplebock beers.
