Ingredients:
- 1-2 tblsp extra virgin olive oil, to taste
- 2-3 tblsp fresh lime juice, to taste
- pinch of salt
- 2 cups corn kernels(from about 4 freshly shucked ears)
- 1 cup firm, fresh blueberries(same size as the corn, if available)
- up to 1 cup chopped arugula
Makes 4 or 5 little servings |

Directions:
Combine everything in a medium bowl and toss gently so you don't break the berries---just enough to combine
Taste to adjust the oil, lime juice and salt. Serve cold or at a cool room temperature as a free standing salad or appetizer, or as a delightful accompaniment to other things. |
